Summer Salmon

You’ll want to drink the garlic butter.

1+ lb salmon

salt and pepper

5 Tbsp butter

5 garlic cloves, minced

1 Tbsp olive oil

2 shallots, sliced

1 Tbsp brown sugar

3ish ears corn, cut from the cob (or 1/2 bag of frozen corn)

1 red pepper, diced

red chili flakes

How to do it

Preheat oven on broil. Season salmon with salt and pepper and place on baking sheet. Melt 4 Tbsp butter in small saucepan. Add garlic and cook until fragrant. Brush a bit of the garlic butter on the salmon, and broil until fish is flaking (8-12 mins depending on thickness).

While fish is cooking, make the corn relish. Add 1 Tbsp butter and olive oil to small saucepan on med-low. Add shallots and a pinch of salt, stirring until shallots turn translucent, about 5 minutes. Add brown sugar and cook until caramelized, about 10 minutes. Stir in corn, diced pepper, and a pinch of chili flakes. Cook another few minutes until it looks relishy and delicious.

Remove fish from oven and pour on remaining garlic butter. Lick your fingers. Spoon corn relish on top of fish. Garnish with parsley if you’re feeling it. Devour!
