Fish Pasta

Philipp’s favorite dinner ever.

olive oil

red pepper flakes

5 cloves chopped garlic

2 shallots, thinly sliced

1 pint cherry tomatoes, cut in half

1/2 cup chopped parsley

1/4 cup white wine

salt ‘n peppa

1 tsp brown sugar

1/2 lemon (for juice and zest)

1-1.5 lb fresh cod

3/4 lb linguini, cooked al dente

How to do it

Heat oil in pan on medium heat. Throw in the garlic and a pinch of red pepper flakes. Sauté for a minute or two. Add shallots and cook until soft. Add tomatoes. Cook and stir for ~10 minutes until they’re nice and blistery. Add wine. Stir until it comes to a simmer. Add brown sugar and a pinch of lemon zest. Transfer sauce into a bowl and set aside.

Add some more oil to the pan and heat on medium. Season the cod with salt and pepper. Place the cod in the oil and cook about 3 minutes on each side. Pour the tomato wine sauce onto the cod and simmer for a few minutes.

Add the parsley, lemon juice, and pasta a couple scoops at a time, mixing it all together. The fish will break up into pieces, that’s great, let it happen. Plate it and throw some fresh parsley and parmesan on top. Boom! Fish pasta.
