Compromise Cookie
He loves oats, she loves chocolate.
2 cups white flour
1/4 cup wheat flour
1 tsp baking soda
1/2 tsp salt
1 cup (2 sticks) butter
1 cup sugar
1 cup brown sugar
2 tsp vanilla
2 eggs
1 cup chocolate chips
1/2 cup chocolate chunks (from your favorite bar of chocolate)
3/4 cups oats
1/2 cup broken pecan pieces
flaky fancy salt for finishing
How to do it
Cream the butter and white and brown sugars together for a couple of minutes until smooth and light (we use a KitchenAid to make these cookies. You can do it by hand but you’ll need some muscles.) Add vanilla and one egg at a time, mixing as you go to incorporate.
Gradually blend in the flours, baking soda, and salt, mixing on low. To avoid the dry ingredients poofing into your face when you mix, wrap a dishtowel around the KitchenAid.
Now, the fun part. Ask your quarantine partner what they like in their cookies. Ask yourself what you like in your cookies. Find a compromise. Be brave. If you’re not really into oats but he’s so into oats, add a little bit of oats. If you’re really into chocolate and he’s like “whatever” about the chocolate, still add so much chocolate because that’s insane to not be really into chocolate.
Gradually add in all the compromise bits (the semisweet chocolate chips, chunks of dark chocolate bars, oats, and those incredible pecan pieces you can get at Trader Joes for like $4). Mix gently until combined. Shape dough into balls and spoon onto ungreased cookie sheet. [Pro tip: Only bake the cookies you’re going to eat today. Save the rest of the dough in the fridge/freezer so you can bake them fresh.]
Bake at 375 degrees for 9-11 minutes, until the edges begin to brown. When you take them out, sprinkle them with Malden salt or whatever salt you have. This is the most important step. Eat warm.
