Fish Stew

Last, but not least.

6 Tbsp olive oil

1 onion, chopped

6 cloves of garlic, minced

1 cup chopped parsley

14oz can crushed tomatoes

1 medium tomato, chopped

2 tsp tomato paste

1/2 cup chicken stock

1/2 cup water

dash of fish sauce

1/2 cup dry white wine

pinch of dried oregano

pinch of dried thyme

dash of Tabasco sauce

salt ‘n pepper to taste

1.5 lb white fish (we used cod)

How to do it

Heat olive oil in large pot on medium-high heat. Sauté onion a few minutes, then add garlic and cook another minute. Add parsley and stir for two minutes. Add canned and fresh tomato and tomato paste, cook another ten minutes.

Add water, broth, white wine, a dash of fish sauce, and the fish. Bring to a simmer and cook 3-5 minutes, until fish is cooked through and starts to break apart.

Add salt, pepper, oregano, thyme, and Tabasco, to taste. Ladle into bowls and serve with some bomb bread. Eat while celebrating that you’ve survived the last year and refreshing the CVS vaccine portal.
