Spinach Strata
It’s stratacular.
1/2 package (5 oz) frozen or fresh spinach, thawed
1 small onion, chopped
1 1/2 Tbsp butter
1/2 tsp salt
1/2 tsp pepper
1/4 tsp nutmeg
4 cups (3-4 slices) cubed bread (this is a great way to get rid of old or stale bread)
1 cup grated pepperjack cheese
1/2 cup grated parmesan
1 1/2 cups milk
4 eggs
1 Tbsp dijon mustard
How to do it
Dry and chop spinach. Sauté onion in butter for 4-5 minutes on med-low heat. Add 1/4 tsp each of salt, pepper, and nutmeg. Stir 1 minute. Stir in spinach and remove from heat.
Spread 1/3 of the bread cubes in a 9x9 square gratin dish or pie dish. Top with 1/3 of the spinach mixture. Sprinkle with 1/3 of pepperjack and parmesan. Repeat this layering twice more, ending with the cheese.
Whisk together the milk, eggs, mustard, and 1/4 tsp each of salt and pepper. Pour this mixture evenly over the strata layers, make sure the bread soaks up the liquid.
Bake at 350 degrees, 45-55 minutes until the cheese on top is browned and the inside isn’t runny. Eat for breakfast, and again for lunch and maybe dinner. And maybe dip it in sriracha.
